Funabashi Sauce Ramen
A distinctive Chiba Prefecture specialty where the broth is flavored with Japanese Worcester-style sauce instead of traditional soy or miso tare — dark, sweet-savory, and uniquely nostalgic.

Ingredients
- 1.5L pork and chicken blended broth
- 4 tbsp Japanese Worcester sauce (Bulldog or similar)
- 1 tbsp soy sauce
- 1 tbsp sugar
- Medium-thickness wavy noodles
- Toppings: chashu, bean sprouts, cabbage, nori, scallions
Instructions
- Prepare a blended pork-chicken broth by simmering bones for 3 hours.
- Season broth with Worcester sauce, soy sauce, and sugar. The result should be dark brown and complex.
- Cook noodles until chewy. Drain.
- Ladle sauce-seasoned broth over noodles.
- Top with chashu, stir-fried bean sprouts, shredded cabbage, nori, and scallions.
