Funeral Potatoes

Cheesy hash brown casserole with cream of chicken soup, sour cream, and a cornflake topping — the Mormon potluck staple served at every funeral, potluck, and holiday in Utah.

Ingredients

• 1 bag (30oz) frozen shredded hash browns, thawed
• 1 can (10oz) cream of chicken soup
• 1 cup sour cream
• 2 cups shredded cheddar cheese
• 1/2 cup butter, melted
• 1/2 onion, diced
• Salt and pepper
• For topping: 2 cups cornflakes, crushed; 1/4 cup butter, melted

Instructions

1. Preheat oven to 350F.
2. Mix hash browns, soup, sour cream, cheddar, melted butter, onion, salt, and pepper.
3. Spread into a greased 9x13 baking dish.
4. Mix crushed cornflakes with melted butter.
5. Sprinkle cornflake topping evenly over casserole.
6. Bake 40-45 minutes until bubbly and golden.
