Ga'at (Genfo)

A stiff porridge made from barley or wheat flour, served with a "volcano" of spiced butter and berbere in the center.

Instructions

  1. Slowly add flour to boiling water while stirring vigorously with a heavy wooden spoon until it forms a very stiff, smooth ball.
  2. Place the dough ball in a bowl and use a spoon to create a hole in the center.
  3. Fill the hole with melted kibbeh and berbere.
  4. Eat by dipping pieces of the porridge into the spicy butter pool.
