Ga'at (Genfo)
A stiff porridge made from barley or wheat flour, served with a "volcano" of spiced butter and berbere in the center.

Ingredients
- 2 cups Roasted Barley flour
- 4 cups Boiling water
- 3 tbsp Niter Kibbeh
- 1 tbsp Berbere
- Yogurt (optional side)
Instructions
- Slowly add flour to boiling water while stirring vigorously with a heavy wooden spoon until it forms a very stiff, smooth ball.
- Place the dough ball in a bowl and use a spoon to create a hole in the center.
- Fill the hole with melted kibbeh and berbere.
- Eat by dipping pieces of the porridge into the spicy butter pool.
