Gai Yang (Isan Grilled Chicken)
Traditional grilled chicken from Northeast Thailand, marinated with coriander root, garlic, and white pepper, then slow-grilled over charcoal.

Ingredients
- 1 whole chicken, butterflied
- 4 coriander roots
- 6 cloves garlic
- 1 tbsp white peppercorns
- 2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tbsp fish sauce
- 1 tbsp palm sugar
- 1 tbsp turmeric powder
Instructions
- Pound coriander roots, garlic, and peppercorns into a paste.
- Mix the paste with oyster sauce, soy sauce, fish sauce, palm sugar, and turmeric.
- Rub the marinade all over the chicken. Marinate for at least 4 hours (or overnight).
- Grill the chicken over medium-low charcoal heat, turning occasionally, until the skin is golden-brown and the juices run clear (about 40-50 minutes).
- Chop into bite-sized pieces and serve with sticky rice and spicy dipping sauce.
