Gai Yang (Isan Grilled Chicken)

Traditional grilled chicken from Northeast Thailand, marinated with coriander root, garlic, and white pepper, then slow-grilled over charcoal.

Instructions

  1. Pound coriander roots, garlic, and peppercorns into a paste.
  2. Mix the paste with oyster sauce, soy sauce, fish sauce, palm sugar, and turmeric.
  3. Rub the marinade all over the chicken. Marinate for at least 4 hours (or overnight).
  4. Grill the chicken over medium-low charcoal heat, turning occasionally, until the skin is golden-brown and the juices run clear (about 40-50 minutes).
  5. Chop into bite-sized pieces and serve with sticky rice and spicy dipping sauce.
