Gỏi Cuốn (Fresh Spring Rolls)
Refreshing and translucent summer rolls filled with shrimp, pork, rice vermicelli, and fresh herbs, wrapped in rice paper.

Ingredients
- 8-10 large rice paper wrappers 200g pork belly, boiled and sliced thin 16 large shrimp, boiled, peeled and halved lengthwise 100g rice vermicelli, cooked Lettuce leaves Fresh mint and chives Peanut Dipping Sauce: Hoisin sauce, peanut butter, water, crushed peanuts, chili
Instructions
- 1. Prepare all ingredients and have a shallow bowl of warm water ready. 2. Dip a rice paper sheet into the water for 2 seconds and lay it flat on a plate. 3. Place a piece of lettuce on the lower third of the wrapper. 4. Top with noodles, a few mint leaves, and pork slices. 5. Roll up halfway, then place 3-4 shrimp halves (pink side down) in a row. 6. Add a few chive stalks so they peek out of the end. 7. Fold the sides inward and finish rolling tightly. 8. Serve with the creamy peanut-hoisin sauce.
