Gooey Butter Cake
St. Louis’s beloved coffee cake — a yeast dough base topped with a nearly liquid mixture of cream cheese, butter, and sugar that sets into a sticky, custardy layer.

Ingredients
- For base: 1 box yellow cake mix, 1 egg, 1/2 cup melted butter
- For topping: 230g cream cheese, softened; 2 eggs; 1 tsp vanilla; 4 cups powdered sugar; 1/2 cup melted butter
- Powdered sugar for dusting
Instructions
- Preheat oven to 350F.
- Mix cake mix, egg, and melted butter. Press into greased 9x13 pan.
- Beat cream cheese until smooth. Add eggs, vanilla, powdered sugar, and melted butter.
- Pour cream cheese mixture over cake base.
- Bake 40-45 minutes — center should still be jiggly (gooey). Do not overbake.
- Cool completely. Dust with powdered sugar.
- Cut into squares. Center will be gooey and dense.
