Grechnevaya Kasha (Buckwheat Porridge)
Russia's most essential grain — toasted buckwheat groats cooked to fluffy perfection, served with butter as a side dish or breakfast.

Ingredients
- 2 cups buckwheat groats (grechka)
- 4 cups water
- 1 tsp salt
- 2 tbsp butter
- Optional: sautéed mushrooms and onions
Instructions
- Rinse buckwheat and dry-toast in a pan 2-3 minutes until fragrant.
- Bring water to boil with salt. Add buckwheat.
- Cover tightly. Reduce heat to very low. Cook 15-18 minutes.
- Do not stir or lift the lid during cooking.
- Remove from heat, add butter, and fluff with fork.
- Serve as a side dish, or top with sautéed mushrooms and onions.
