Guacamole
Mexico's most famous condiment — ripe avocados mashed with lime, cilantro, onion, serrano chili, and salt. Simple, ancient, and perfect.

Ingredients
- 3 ripe Hass avocados
- Juice of 2 limes
- 1/4 white onion, finely diced
- 1 serrano chili, finely diced
- Fresh cilantro, chopped
- Salt
- 2 tbsp diced tomato (optional)
Instructions
- Halve avocados. Remove pit. Scoop flesh into a molcajete or bowl.
- Mash to desired consistency (some chunks are traditional).
- Add lime juice, onion, serrano, cilantro, and salt.
- Mix gently.
- Taste and adjust lime and salt.
- Serve immediately.
