Dongbei Guo Bao Rou
Double-fried crispy pork slices in a sharp, sweet and sour vinegar sauce.

Ingredients
- Pork loin, sliced thin
- Batter: Potato starch and water
- Sauce: White vinegar, sugar, salt, ginger, cilantro
Instructions
- Coat pork in thick starch batter. Fry once at low temp, then again at high temp until shatteringly crisp.
- Quickly toss in the boiling vinegar-sugar sauce with ginger slivers.
- Serve immediately while still crispy.
