Gyudon (Beef Bowl)
The quintessential Japanese fast-food lunch — thinly sliced beef and onions simmered in a sweet and savory dashi sauce, served over a large bowl of steaming rice.

Ingredients
- 200g thinly sliced beef ribeye or chuck
- 1 onion, sliced
- 2 bowls cooked Japanese rice
- Sauce: 150ml dashi, 2 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sugar, 1 tbsp sake
- Pickled red ginger (beni shoga) for garnish
Instructions
- Combine all sauce ingredients in a pan and bring to a boil.
- Add onions and simmer until softened.
- Add beef slices and cook until just done (do not overcook).
- Ladle the beef, onions, and plenty of sauce over hot rice.
- Garnish with beni shoga and an optional onsen egg.
