Haleem
A thick, slow-cooked porridge made with wheat, meat, and legumes, simmered for hours until it reaches a smooth, creamy consistency - a winter comfort food.

Ingredients
- 500g lamb or beef
- 1 cup wheat berries
- 1/2 cup each: chickpeas, lentils
- 2 onions, sliced
- 1/4 cup oil
- 1 tbsp turmeric
- Salt, pepper, cinnamon
- Toppings: fried onion, cinnamon, sugar
Instructions
- Soak wheat berries overnight.
- Brown meat with onions and turmeric.
- Add soaked wheat, chickpeas, and lentils.
- Cover with water and bring to a boil.
- Reduce heat and simmer for 5-6 hours, stirring frequently.
- The mixture should become very thick and porridge-like.
- Season well. Serve topped with fried onions, cinnamon, and sugar.
