Haleem

Slow-cooked wheat, lentils, and beef pounded to a thick, porridge-like consistency — the most satisfying and nutritious dish of South Asia.

Instructions

  1. Soak wheat overnight. Cook all dals and wheat until completely soft.
  2. Cook beef with ginger-garlic paste, haleem masala, and turmeric until tender.
  3. Combine meat and grain mixture.
  4. Use a wooden spoon or immersion blender to partially mash — texture should be thick and shredded.
  5. Cook together 30 more minutes.
  6. Serve drizzled with ghee, topped with crispy onions, ginger, lime, and chilies.
