Harissa (Wheat and Chicken Porridge)
A slow-cooked, savory porridge made from cracked wheat and shredded chicken or lamb, beaten until silky.

Ingredients
- 1 kg whole chicken
- 2 cups korkot (cracked wheat)
- Water
- Salt
- Clarified butter (ghee) for serving
Instructions
- 1. Place chicken and wheat in a large pot with water. 2. Simmer on very low heat for 4-6 hours until the meat falls off the bone and wheat is soft. 3. Remove bones. 4. Beat the mixture vigorously with a wooden spoon until it reaches a smooth, thick consistency. 5. Serve in bowls with a large well of melted clarified butter in the center.
