Hēi Dòu Zhōu (Black Bean Porridge)
Chinese black soybean porridge — slow-cooked with rice until creamy, a traditional tonic food believed to nourish the kidneys.

Ingredients
- 1/2 cup black soybeans, soaked overnight
- 1/2 cup rice
- 6 cups water
- Rock sugar or honey
- Red dates (optional)
- Goji berries (optional)
Instructions
- Drain soaked black beans.
- Combine beans, rice, and water in a pot. Bring to boil.
- Reduce to low simmer. Cook 60-90 minutes, stirring occasionally.
- Add red dates and goji berries in last 20 minutes.
- Sweeten with rock sugar or honey to taste.
- Serve warm as a nourishing breakfast.
