Hiyashi Chūka (Cold Summer Ramen)

A refreshing cold ramen served only in summer — chilled noodles topped with colorful strips of egg, ham, cucumber, and tomato, dressed with a tangy sesame or soy-vinegar sauce.

  1. Cook noodles according to package. Rinse under cold water until completely chilled. Drain well.
  2. Prepare toppings: make thin egg omelettes and julienne; julienne ham and cucumber.
  3. Make dressing: whisk together soy sauce, rice vinegar, sugar, sesame oil, and mustard.
  4. Arrange chilled noodles on plates. Fan toppings in colorful sections on top.
  5. Drizzle with dressing just before serving. Add karashi mustard on the side.
