Hiyashi Chūka (Cold Summer Ramen)
A refreshing cold ramen served only in summer — chilled noodles topped with colorful strips of egg, ham, cucumber, and tomato, dressed with a tangy sesame or soy-vinegar sauce.

Ingredients
- 400g thin ramen noodles
- 2 eggs, beaten into thin omelettes and julienned
- 200g ham, julienned
- 1 cucumber, julienned
- 2 tomatoes, sliced
- Dressing: 4 tbsp soy sauce, 3 tbsp rice vinegar, 2 tbsp sugar, 1 tbsp sesame oil, 1 tsp karashi mustard
- Optional: crab stick, beni shoga, sesame seeds
Instructions
- Cook noodles according to package. Rinse under cold water until completely chilled. Drain well.
- Prepare toppings: make thin egg omelettes and julienne; julienne ham and cucumber.
- Make dressing: whisk together soy sauce, rice vinegar, sugar, sesame oil, and mustard.
- Arrange chilled noodles on plates. Fan toppings in colorful sections on top.
- Drizzle with dressing just before serving. Add karashi mustard on the side.
