Panamanian fried dough — puffy, golden, and slightly crispy, eaten for breakfast with cheese and coffee. Panama's version of a fritter.

Instructions

  1. Mix flour, baking powder, sugar, and salt.
  2. Rub in butter. Add water to form a soft dough.
  3. Knead briefly. Rest 10 minutes.
  4. Divide into balls. Flatten into thin discs.
  5. Fry in hot oil until puffed and golden, about 2 minutes per side.
  6. Drain on paper. Serve with cheese or egg.
