  1. Preheat oven to 350F.
  2. Whisk together sugar, flour, salt, and nutmeg in a bowl.
  3. Add heavy cream and vanilla. Whisk until smooth.
  4. Pour filling into unbaked pie crust.
  5. Dot the surface with small pieces of butter.
  6. Bake 45-50 minutes, gently stirring the filling with a fork every 15 minutes to prevent a thick skin from forming.
  7. The pie is done when the center is just set and the top has golden spots.
  8. Cool completely. The filling will thicken as it cools.
  9. Serve at room temperature or slightly chilled.
