Hoppers (Appam)
Bowl-shaped fermented pancakes made from rice flour and coconut milk, with crispy edges and a soft, spongy center.

Ingredients
- rice flour, coconut milk, yeast, sugar, salt, water, egg (for egg hoppers)
Instructions
- Ferment the batter made from rice flour, coconut milk, and yeast for several hours. Heat a small wok-like pan (appachatti). Pour a ladle of batter and swirl to coat the sides. Cover and cook until the center is spongy and edges are crispy. For egg hoppers, crack an egg into the center before covering.
