Humita en Chala (Fresh Corn Tamales)
A traditional Andean dish made from fresh ground corn, sautéed onions, and spices, wrapped in corn husks and boiled.

Ingredients
- 6-8 fresh corn cobs
- 1 onion, finely chopped
- 1 red bell pepper, finely chopped
- 100g goat cheese or fresh cheese
- 1 tsp paprika
- Salt, pepper, and sugar
- Corn husks (chalas)
Instructions
- Grate the corn kernels into a thick paste.
- Sauté onion and pepper, then mix with the corn paste and spices.
- Overlap two husks, place a portion of the mixture and a piece of cheese in the center.
- Fold into a packet and tie with strips of husk.
- Boil in salted water for 45 minutes.
