Instructions

  1. Soak rice and dal separately 6-8 hours.
  2. Grind dal to a very fluffy, airy batter. Grind rice to a slightly coarser texture.
  3. Mix together. Add salt.
  4. Ferment 8-12 hours at room temperature until doubled and airy.
  5. Grease idli molds. Fill 3/4 full.
  6. Steam 12-15 minutes until set.
  7. Serve with sambar and chutneys.
