Idli
Soft, steamed rice and lentil cakes — the pillowy, fermented South Indian breakfast that has sustained millions for centuries.

Ingredients
- 300g idli rice (or parboiled rice)
- 100g urad dal (split black lentil)
- 1 tsp fenugreek seeds
- Salt
- Water
Instructions
- Soak rice and dal separately 6-8 hours.
- Grind dal to a very fluffy, airy batter. Grind rice to a slightly coarser texture.
- Mix together. Add salt.
- Ferment 8-12 hours at room temperature until doubled and airy.
- Grease idli molds. Fill 3/4 full.
- Steam 12-15 minutes until set.
- Serve with sambar and chutneys.
