Kuzu İncik (Lamb Shank)
Succulent lamb shanks slow-cooked until falling off the bone, usually served with eggplant purée or buttery rice pilaf.

Ingredients
- 2 lamb shanks
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 500ml beef or lamb stock
- Olive oil, salt, pepper
Instructions
- Sear the lamb shanks in olive oil until browned on all sides. Remove and set aside.
- Sauté onion, carrots, and garlic in the same pot. Stir in tomato paste and thyme.
- Return shanks to the pot and add stock. Cover and simmer on low heat for 2.5 hours or until very tender.
- Reduce the sauce until thickened and glossy.
- Serve the shanks with their rich gravy over mashed potatoes or hünkar beğendi (eggplant purée).
