Kuzu İncik (Lamb Shank)

Succulent lamb shanks slow-cooked until falling off the bone, usually served with eggplant purée or buttery rice pilaf.

Instructions

  1. Sear the lamb shanks in olive oil until browned on all sides. Remove and set aside.
  2. Sauté onion, carrots, and garlic in the same pot. Stir in tomato paste and thyme.
  3. Return shanks to the pot and add stock. Cover and simmer on low heat for 2.5 hours or until very tender.
  4. Reduce the sauce until thickened and glossy.
  5. Serve the shanks with their rich gravy over mashed potatoes or hünkar beğendi (eggplant purée).
