Injeolmi (Soybean Powder Rice Cakes)
Chewy, nutty rice cakes made from steamed glutinous rice, pounded until elastic and coated in roasted soybean powder.

Ingredients
- 2 cups glutinous rice, soaked
- 1 cup roasted soybean powder (kinako/kong-garu)
- Sugar, salt, water
Instructions
- Steam glutinous rice until soft.
- Pound the rice with a wooden mallet or use a stand mixer until it becomes a sticky, stretchy dough.
- Shape into a long log and cut into bite-sized pieces.
- Roll the pieces in roasted soybean powder until well coated.
