Irish Stew

Ireland's national dish — a simple, soul-warming stew of lamb, potatoes, onions, and carrots, slow-simmered until falling apart.

Instructions

  1. Layer in a heavy pot: onions, then lamb, then carrots, then potatoes.
  2. Pour over stock. Add thyme and bay leaves.
  3. Bring to gentle simmer. Cook covered for 2-2.5 hours.
  4. The potatoes on top should remain intact; bottom ones dissolve to thicken.
  5. Season with salt and pepper. Scatter with parsley.
  6. Serve with soda bread.
