Irish Stew
Ireland's national dish — a simple, soul-warming stew of lamb, potatoes, onions, and carrots, slow-simmered until falling apart.

Ingredients
- 1kg lamb shoulder, bone-in, cut into chunks
- 1kg potatoes, peeled and thickly sliced
- 4 carrots, sliced
- 3 onions, sliced
- 2 cups lamb or chicken stock
- Thyme, bay leaves
- Salt, pepper
- Fresh parsley
Instructions
- Layer in a heavy pot: onions, then lamb, then carrots, then potatoes.
- Pour over stock. Add thyme and bay leaves.
- Bring to gentle simmer. Cook covered for 2-2.5 hours.
- The potatoes on top should remain intact; bottom ones dissolve to thicken.
- Season with salt and pepper. Scatter with parsley.
- Serve with soda bread.
