Ingredients
- quail eggs or chicken eggs, soy sauce, sugar, five-spice, star anise
Instructions
- Repeatedly braise eggs in a spiced soy mixture and then air-dry them. Each cycle makes the egg darker, smaller, and chewier. Usually takes several days.
