Jāņu Siers (Caraway Cheese)

A traditional fresh sour-milk cheese seasoned with caraway seeds, specifically made for Midsummer (Jāņi) celebrations.

  1. 1. Heat the milk in a large pot until it starts to boil. 2. Add the cottage cheese and stir until the milk curdles and the whey separates. 3. Drain the mass through a cheesecloth. 4. In another pot, melt the butter and add the curd mass. 5. Stir in the beaten eggs, caraway seeds, and salt. 6. Cook on low heat, stirring constantly, until the cheese becomes smooth and starts to pull away from the sides of the pot. 7. Pour into a bowl or mold and let it set in a cool place.
