Kare Raisu (Japanese Curry Rice)
A thick, stew-like curry that is sweeter and milder than its Indian origins, usually containing beef, potatoes, and carrots, served with sticky white rice.

Ingredients
- 500g beef or chicken, cubed
- 2 large potatoes, 1 carrot, 2 onions, all cubed
- 1 pack Japanese curry roux cubes
- 1L water
- Secret ingredients: 1 tbsp honey, 1 grated apple, 1 tsp instant coffee
Instructions
- Sauté meat and onions until browned.
- Add potatoes and carrots. Add water and bring to a boil.
- Simmer for 20 minutes until vegetables are tender.
- Turn off heat and add curry roux cubes. Stir until dissolved.
- Add honey and grated apple. Simmer on low for another 10 minutes until thick and glossy.
- Serve over hot jasmine or short-grain rice with fukujinzuke pickles.
