Japchae (Glass Noodle Stir-Fry)
A festive dish of chewy sweet potato glass noodles stir-fried with a colorful array of vegetables and seasoned beef, dressed in a sweet and savory soy-sesame sauce.

Ingredients
- 200g Dangmyeon (sweet potato glass noodles)
- 100g beef ribeye, sliced into thin strips
- 1 bunch spinach, blanched and seasoned
- 1 carrot, julienned
- 1/2 onion, sliced
- 3-4 shiitake mushrooms, sliced
- 2 green onions, sliced
- Sauce: 4 tbsp Soy sauce, 2 tbsp Sugar, 2 tbsp Sesame oil, 1 tsp Toasted sesame seeds, 1/2 tsp Black pepper
Instructions
- Boil the glass noodles for 7 minutes until chewy. Drain and cut into shorter lengths.
- Toss the noodles with 1 tbsp each of soy sauce and sesame oil while hot.
- Sauté each vegetable separately with a pinch of salt to preserve their individual colors and flavors.
- Stir-fry the marinated beef until cooked.
- In a large mixing bowl, combine the noodles, sautéed vegetables, and beef.
- Add the remaining sauce ingredients and toss everything together thoroughly.
- Garnish with toasted sesame seeds and serve warm or at room temperature.
