Jingyalov Hats (Herb-Stuffed Flatbread)
A specialty from Artsakh—a thin flatbread stuffed with over 20 types of wild and cultivated fresh herbs.

Ingredients
- Dough: flour, water, salt. Filling: 1 kg mixed fresh herbs (cilantro, parsley, spinach, green onion, sorrel, nettle, etc.), chopped
- Vegetable oil
- Pomegranate seeds (optional)
Instructions
- 1. Roll the dough into a paper-thin circle. 2. Mix the finely chopped herbs with oil and seasoning just before stuffing. 3. Place a large mound of herbs in the center of the dough. 4. Seal the edges to form a large oval parcel. 5. Griddle on a dry hot surface (saj) for 2 minutes per side until the bread is cooked and herbs are wilted.
