The king of Bangladeshi rice dishes—tender raw mutton layered with aromatic rice and slow-cooked in a sealed pot.

Ingredients
- mutton, basmati rice, yogurt, papaya paste (tenderizer), ginger-garlic paste, zafran (saffron), milk, ghee, potatoes, whole spices, flour dough (for sealing)
Instructions
- Marinate raw mutton with spices and papaya paste. Layer with partially cooked rice and fried potatoes. Seal the pot with dough and slow-cook (dum) until the meat is incredibly tender and the rice is fragrant. Mix gently before serving.
