Kaczka po Staropolsku (Old Polish Roast Duck)

Succulent roast duck stuffed with apples and marjoram, a classic of historical Polish gentry cuisine.

Instructions

  1. Rub the duck inside and out with salt, pepper, garlic, and plenty of marjoram. Let it marinate for at least 2 hours.
  2. Core and quarter the apples. Stuff the duck with them.
  3. Prick the skin in several places to allow fat to drain.
  4. Roast at 180°C (350°F) for about 2 hours, basting frequently with its own juices or honey/juice mixture.
  5. The duck is ready when the skin is crispy and meat tender.
