Kaczka po Staropolsku (Old Polish Roast Duck)
Succulent roast duck stuffed with apples and marjoram, a classic of historical Polish gentry cuisine.

Ingredients
- 1 whole duck (approx. 2kg)
- 4-5 tart apples (like Antonówka)
- 3 tbsp marjoram
- 3 cloves garlic, minced
- Salt and pepper
- 100ml honey or apple juice for basting
Instructions
- Rub the duck inside and out with salt, pepper, garlic, and plenty of marjoram. Let it marinate for at least 2 hours.
- Core and quarter the apples. Stuff the duck with them.
- Prick the skin in several places to allow fat to drain.
- Roast at 180°C (350°F) for about 2 hours, basting frequently with its own juices or honey/juice mixture.
- The duck is ready when the skin is crispy and meat tender.
