Kalakukko (Fish and Pork Bread)
A traditional dish from the Savo region, featuring a rye crust filled with small fish (vendace) and fatty pork, slow-baked for several hours.

Ingredients
- Crust: 4 cups rye flour, 1 cup all-purpose flour, 2 cups water, 2 tbsp butter, 1 tsp salt. Filling: 1.5 lbs vendace or small perch, 1 lb fatty pork belly, 2 tsp salt.
Instructions
- Make the dough and roll into a large oval. Layer the fish and pork strips in the center, seasoning each layer with salt. Fold the dough over the filling and seal tightly with water. Bake at 400°F (200°C) for 1 hour, then lower to 250°F (120°C) and bake for 4-5 more hours. Brush with butter throughout.
