Kapuśniak (Sauerkraut Soup)
A robust, tangy soup made from sauerkraut and smoked meats. It is the ultimate winter warmer, packed with vitamin C and deep smoky flavors.

Ingredients
- 500g sauerkraut, chopped
- 200g smoked bacon or ribs
- 2 potatoes, diced
- 1 carrot, 1 onion
- 1.5L water or stock
- Bay leaf, allspice, pepper
Instructions
- Boil the smoked meat with spices in water to make a broth.
- Add diced potatoes and carrot. Cook until soft.
- Add the sauerkraut (with its juice if you like it sour).
- Simmer for another 20-30 minutes.
- Remove the meat, dice it, and return to the soup.
