Karbonāde (Latvian Pork Schnitzel)

A tenderized pork chop breaded and fried, often served with a creamy mushroom sauce.

  1. 1. Place the pork chops between sheets of plastic wrap and pound them with a meat mallet until thin and tender. 2. Season the meat with salt and pepper. 3. Dredge each chop in flour, then dip in beaten egg, and finally coat with breadcrumbs (or more flour). 4. Heat oil in a pan and fry the chops until golden brown and cooked through (about 4-5 minutes per side). 5. Serve with boiled potatoes and a side of fresh salad.
