Kare-Kare
A rich and savory peanut stew made with oxtail, tripe, or beef, traditionally served with shrimp paste (bagoong).

Ingredients
- 1kg oxtail or beef chuck, cut into pieces 1/2 cup peanut butter 1/4 cup ground toasted rice (for thickening) 1 tbsp annatto seeds (for color) Vegetables: Banana blossom, eggplant, string beans, bok choy Sautéed shrimp paste (bagoong alamang) for serving
Instructions
- 1. Boil the meat until tender (this can take 2+ hours). Save the broth. 2. Sauté garlic and onion. Add the meat and some broth. 3. Stir in the peanut butter and annatto water (soaked seeds). Bring to a simmer. 4. Add the ground toasted rice to thicken the sauce until it reaches a velvety consistency. 5. Steam the vegetables separately or add them to the stew in order of cooking time. 6. Serve hot with a generous side of salty bagoong.
