Kartupeļu Pankūkas (Latvian Potato Pancakes)
Crispy potato pancakes; everyday comfort food across the Baltics, served with sour cream or lingonberry jam.

Ingredients
- 1kg potatoes, peeled 1 onion 1 egg 2-3 tbsp all-purpose flour Salt and black pepper to taste Oil for frying Sour cream for serving
Instructions
- 1. Finely grate the potatoes and onion using a hand grater or food processor. 2. Squeeze out any excess liquid from the grated mixture. 3. In a bowl, mix the potatoes and onion with the egg, flour, salt, and pepper. 4. Heat oil in a large frying pan over medium-high heat. 5. Drop spoonfuls of the batter into the pan and flatten them into pancakes. 6. Fry until golden brown and crispy on both sides (about 3-4 minutes per side). 7. Serve hot with sour cream.
