Katsu Sando (Cutlet Sandwich)
A deceptively simple sandwich of crispy tonkatsu between slices of pillowy shokupan milk bread, slathered with tonkatsu sauce and karashi mustard — Japan's most famous convenience store luxury.

Ingredients
- 2 thick pork loin cutlets, prepared as tonkatsu
- 4 slices shokupan (Japanese milk bread)
- Tonkatsu sauce (Bull-Dog brand or homemade)
- Japanese karashi mustard
- Finely shredded cabbage (optional)
Instructions
- Prepare tonkatsu: season, flour, egg, panko, and deep-fry until golden. Drain well.
- Spread one side of each bread slice with karashi mustard, the other with tonkatsu sauce.
- Place the hot cutlet on the bread. Add shredded cabbage if desired.
- Close the sandwich, press gently, and trim crusts.
- Cut in half diagonally. Serve immediately.
