Katsudon (Pork Cutlet Bowl)
A hearty bowl of rice topped with a deep-fried breaded pork cutlet, onions, and egg simmered in a savory sweet sauce.

Ingredients
- 2 tonkatsu (pork cutlets)
- 1 small onion, sliced
- 2 eggs, lightly beaten
- 1/2 cup dashi stock
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp sugar
- 2 cups hot cooked rice
- Mitsuba for garnish
Instructions
- Place dashi, soy sauce, mirin, and sugar in a pan; add onion and simmer until soft.
- Slice the tonkatsu into strips and place on top of the onions.
- Drizzle eggs over everything and cook until set.
- Slide the mixture over bowls of rice.
- Garnish and serve hot.
