Kazy (Horse Meat Sausage)
A prized Kazakh delicacy, Kazy is a traditional cold-cut sausage made from seasoned horse rib meat stuffed into natural casings and then boiled or smoked.

Ingredients
- 1 kg Horse rib meat, 500g Horse fat, 2 tbsp Salt, 1 tbsp Black Pepper, 1 tbsp Cumin, 5 Garlic cloves (minced), natural Horse or Beef casings.
Instructions
- 1. Cut meat and fat into long strips. 2. Season with salt, pepper, cumin, and garlic. Let marinate for 24 hours. 3. Stuff the mixture tightly into clean casings and tie the ends. 4. Prick with a needle to release air. 5. Boil slowly in water for 2 hours or smoke until cured. 6. Cool and slice thin to serve.
