Kebda Iskandarani (Alexandrian Liver)
A spicy and aromatic stir-fry of beef liver, unique to the city of Alexandria, heavily seasoned with garlic, cumin, and green chilies.

Ingredients
- 500g beef liver, thinly sliced into small strips
- 10 cloves garlic, minced
- 3-4 green chilies (spicy), sliced
- 2 tbsp vinegar
- 1 tbsp cumin, 1 tsp coriander
- Salt and black pepper
- Oil for frying
Instructions
- Marinate liver with half the garlic, cumin, coriander, vinegar, and salt for 15 minutes.
- Heat oil in a large skillet until very hot.
- Add the liver in a single layer. Do not stir immediately to get a good sear.
- Add the remaining garlic and green chilies. Stir-fry for 3-5 minutes until the liver is just cooked through.
- Serve immediately in small French-style rolls (fino) with tahini sauce.
