Kebda Iskandarani (Alexandrian Liver)

A spicy and aromatic stir-fry of beef liver, unique to the city of Alexandria, heavily seasoned with garlic, cumin, and green chilies.

Instructions

  1. Marinate liver with half the garlic, cumin, coriander, vinegar, and salt for 15 minutes.
  2. Heat oil in a large skillet until very hot.
  3. Add the liver in a single layer. Do not stir immediately to get a good sear.
  4. Add the remaining garlic and green chilies. Stir-fry for 3-5 minutes until the liver is just cooked through.
  5. Serve immediately in small French-style rolls (fino) with tahini sauce.
