Kentucky Hot Brown
Open-faced turkey sandwich smothered in Mornay sauce, topped with bacon and tomato, then broiled — Louisville's famous late-night hotel creation.

Ingredients
- 4 thick slices white toast, crusts removed
- 400g roast turkey breast, sliced
- 8 strips bacon, cooked
- 2 tomatoes, sliced
- For Mornay sauce: 3 tbsp butter, 3 tbsp flour, 400ml whole milk, 100g sharp cheddar grated, 50g Parmesan grated, salt, pepper, nutmeg
Instructions
- Make Mornay sauce: melt butter, whisk in flour, cook 1 minute. Add milk gradually. Whisk until thick. Add cheddar and half the Parmesan. Season with salt, pepper, nutmeg.
- Place toast slices in individual oven-safe dishes.
- Layer turkey on toast. Add tomato slices.
- Ladle Mornay sauce generously over everything.
- Broil 3-4 minutes until sauce bubbles and browns.
- Top with bacon and remaining Parmesan.
