Khash (Cow's Trotters Soup)

A legendary Armenian winter dish made from slow-boiled cow's trotters, served with plenty of garlic and dried lavash.

  1. 1. Soak trotters in water for 24 hours, changing water frequently. 2. Boil the trotters in water for 10-12 hours until the meat separates from the bone and the broth is thick and gelatinous. 3. Do not add salt during cooking. 4. Serve the broth hot. Diners add salt, large amounts of crushed garlic, and crumbled dried lavash until the soup is a thick mush. 5. Traditionally accompanied by vodka shots.
