Khinkali (Georgian Soup Dumplings)
Juicy, pleated dumplings filled with spiced meat and a rich broth that forms inside during cooking.

Ingredients
- Dough: flour, water, salt. Filling: 1 kg ground beef and pork mix, 2 onions (finely chopped), cilantro, parsley, red pepper flakes, black pepper, and plenty of water to make the meat juicy.
Instructions
- 1. Mix the filling ingredients, adding enough water so the meat is almost like a thick soup. 2. Roll out dough thin and cut into 4-inch circles. 3. Place a spoonful of filling in the center. 4. Pleat the edges together to form a knot at the top. 5. Boil in salted water until the dumplings float and the tops turn downward. 6. To eat, hold by the knot, take a small bite from the side, suck out the hot broth, and then eat the rest. The tough knots are traditionally left on the plate to count how many you've eaten.
