Khorovats (Armenian Barbecue)
The soul of Armenian hospitality—perfectly marinated meat chunks grilled over open coals, traditionally served with lavash and fire-roasted vegetables.

Ingredients
- 2 kg pork, lamb, or beef chunks
- 3 large onions, sliced
- 2 tbsp salt
- 1 tbsp black pepper
- 1 tbsp dried basil or purple basil
- Lavash flatbread
- Fire-roasted tomatoes, eggplants, and peppers
Instructions
- 1. In a large bowl, mix the meat chunks with sliced onions, salt, pepper, and dried herbs. 2. Massage the marinade into the meat and let it sit for at least 4 hours (ideally overnight). 3. Thread the meat onto metal skewers (shish). 4. Grill over hot coals (not flames), rotating frequently until the meat is browned and juicy. 5. To serve, wrap the meat in lavash bread to soak up the juices. 6. Serve with fire-roasted vegetables also grilled on skewers.
