Kocho
A fermented bread made from the scraped trunk and roots of the Enset (false banana) plant, a vital staple in Southern Ethiopia.

Ingredients
- 1 kg Fermented Enset pulp (Kocho)
- Water as needed
Instructions
- Squeeze excess water from the fermented enset pulp.
- Chop the pulp finely to remove any long fibers.
- Form into a flat disc or wrap in enset leaves.
- Bake on a hot mitad or griddle until firm and cooked through.
