Kokoreç

Spiced lamb or goat intestines wrapped around seasoned offal, grilled on a horizontal spit and served in bread.

Ingredients

• Lamb intestines
• Sweetbreads
• Tomato, green pepper
• Dried oregano, chili flakes

Instructions

1. Clean and wrap intestines around a horizontal spit
2. Slowly grill until crispy on the outside
3. Chop finely with tomatoes and spices
4. Serve in toasted half-loaves of bread
