Kongguksu (Cold Soy Milk Noodles)

A refreshing summer specialty of wheat noodles served in a thick, creamy, and chilled broth made from freshly ground soybeans.

Ingredients

Instructions

  1. Soak soybeans overnight.
  2. Boil beans for 15-20 minutes until just tender.
  3. Drain and blend beans with fresh water until extremely smooth; strain if a finer texture is desired.
  4. Chill the soy milk thoroughly.
  5. Boil noodles and rinse in ice water.
  6. Place noodles in a bowl, pour chilled soy milk over, and garnish.
