Kosereva (Citrus Peel Preserves)

A tart and sweet preserve made from the rinds of "apepú" (bitter oranges), cooked in molasses.

  1. 1. Grate the zest off the oranges. Cut in half and remove fruit. 2. Soak the rinds in water for 24 hours, changing the water multiple times to remove bitterness. 3. Boil the rinds until soft. 4. Cook in syrup or molasses until they are dark and sweet.
