Kuay Jab Yuan (Vietnamese-Thai Rolled Noodle Soup)
Loose, rolled rice sheet noodles in a clear five-spice pork broth — a Bangkok Chinatown classic eaten at midnight.

Ingredients
- 150g wide rice sheet noodles, rolled loosely
- 1L clear pork broth
- 200g pork belly slices, boiled
- 2 boiled eggs, halved
- 100g crispy pork intestines (pak pong)
- 3 tbsp soy sauce
- 1 tbsp dark soy sauce
- White pepper
- Crispy garlic
- Cilantro
Instructions
- Season broth with soy sauces.
- Blanch noodles briefly. Place in a bowl.
- Add pork slices, egg, and intestines.
- Pour hot broth over.
- Top with crispy garlic, white pepper, and cilantro.
