Kuku Sabzi
A fragrant herb frittata made with fresh herbs, eggs, and barberries, pan-fried until golden and served with bread as a street food snack.

Ingredients
- 6 eggs
- 1 cup mixed chopped herbs (parsley, cilantro, dill, chives)
- 1/4 cup flour
- 1/2 tsp baking powder
- 2 tbsp barberries (optional)
- 1/4 cup walnuts, chopped
- Salt, pepper, turmeric
- Oil for frying
Instructions
- Whisk eggs in a large bowl.
- Fold in chopped herbs, flour, and baking powder.
- Add barberries and walnuts. Season well.
- Heat oil in a non-stick pan.
- Pour the mixture and cook on medium-low until bottom is golden.
- Flip and cook the other side. Serve hot with bread.
