Kuy Teav (Khmer Noodle Soup)
Cambodia's beloved breakfast noodle soup, featuring a clear pork broth, flat rice noodles, and various toppings like minced pork, shrimp, and liver.

Ingredients
- 1 kg pork bones for broth
- 500g flat rice noodles
- 200g minced pork
- 100g cooked shrimp
- Bean sprouts, lime, and chili for garnish
- Garlic oil
- Green onions and cilantro.
Instructions
- 1. Simmer pork bones with roasted onion and ginger for 3 hours to make a clear broth. 2. Sauté minced pork with garlic and pepper. 3. Blanch noodles in hot water and place in a bowl. 4. Add minced pork and shrimp on top of the noodles. 5. Pour the hot broth over the noodles. 6. Garnish with garlic oil, green onions, and fresh cilantro. 7. Serve with bean sprouts and lime on the side.
